SERVES 16; makes 2 small loves or 1 large loaf
Ingredients:
4 very ripe large bananas (key to maximum flavor and tenderness)
1 +1/2 cups white whole wheat flour (such as King Arthur brand: http://www.kingarthurflour.com/flours/white-whole-wheat-flour.html)
½ cup sugar (or Splenda)
1 tablespoon butter or soft tub margarine such as Smart Balance, softened
1 teaspoon vanilla extract (I use more than my mom–1 tablespoon!)
1 teaspoon baking soda
1/2 teaspoon baking powder
1 egg
¼ cup unsweetened applesauce (I used my Aunt Zina’s homemade applesauce from the apples in her garden, but if you don’t have an Aunt Zina, storebought works too.)
2T each ground flaxseed and wheat germ
optional nuts or small amount of chocolate chips for variety (mini chocolate chips are my favorite; 1 tablespoon has about 70 calories, but a little goes a long way if you get the mini version.)
Directions: Preheat oven to 350 degrees. Mash bananas in a bowl. Add all other ingredients and mix well, Pour into 2 greased loaf pans (or you can pour it all into one, but it rises enough that you can split it in half). Bake for 50 to 60 minutes, or until toothpick inserted into center of cake comes out clean.
