Jewel’s Cucumbers

2 cucumbers, peeled if coating is waxy, and sliced thin (preferably local for best taste and freshness)

1 tablespoon white vinegar

Dash of salt and black pepper to taste

2 cups water

Slice cucumbers and put in bowl with vinegar, salt, pepper, and water. Let marinate for at least 1 hour in the fridge or longer, such as overnight, for better flavor.

Note: If you don’t like seeds, my  mother in law says to use English hot house cucumbers (the long ribbed ones in plastic wrap) or the baby (pickling) cucumbers.
