Looking for a great summer side dish, sandwich topper, or fun snack that’s super low in calories but has tons of flavor? Try this super simple but tasty recipe from my husband’s late grandmother, Jewel…
2 cucumbers, peeled if coating is waxy, and sliced thin (preferably local for best taste and freshness)
1 tablespoon white vinegar
Dash of salt and black pepper to taste
2 cups water
Slice cucumbers and put in bowl with vinegar, salt, pepper, and water. Let marinate for at least 1 hour in the fridge or longer, such as overnight, for better flavor.
Note: If you don’t like seeds, my mother in law says to use English hot house cucumbers (the long ribbed ones in plastic wrap) or the baby (pickling) cucumbers.
