Featured Recipe: Spicy Roasted Chickpeas
Beans are the perfect combination of protein and carbs. They are also a great source of fiber and other vitamins and minerals. Enjoy popping these into your mouth! Great for parties, too!
Preheat oven to 350 degrees. Drain and rinse 2 cans of chickpeas. Dry very well with a towel. Place on a pre-sprayed baking sheet and top with cooking spray. Toss with chili powder, cumin, coriander, a little salt, and black pepper (or any spices that you like). Bake for 35-40 minutes, shaking pan every 10 minutes to avoid burning on the bottom. Remove pan from oven, let cool on baking sheet, and serve.
Tip: If making in advance, you will need to re-toast them before serving to bring back the crunch, as they can get soggy if stored in an air-tight container.
