Eat less by eating more!

Vegetables, that is! Take advantage of fresh produce from your local farmer’s market (find one at http://www.localharvest.org/farmers-markets/) and fix yourself a delicious vegetable salad to eat before dinner or lunch. Doing so can take the edge off your hunger and may even help you to eat less of your main course. Remember to use only a teaspoon (thumb tip) of olive oil and plenty of balsamic or other vinegar for dressing. Or, see below for some low-calorie dressing recipes, adapted from the book Joy’s Life Diet by Joy Bauer, MS, RD. Happy Eating! 

Low-Calorie Balsamic Vinaigrette

1 clove garlic, minced (1 teaspoon), or ¼ teaspoon garlic powder

2 tablespoons Dijon mustard

2 tablespoons balsamic vinegar

1 tablespoon fresh lemon juice

1 tablespoon water

Combine all the ingredients in a small bowl and whisk them together well. Keep refrigerated in airtight container for up to 1 week.

Makes approximately 3 servings, 2 tablespoons each

Low-Calorie Raspberry Vinaigrette

2 tablespoons raspberry jam, all fruit

2 tablespoons Dijon mustard

2 tablespoons balsamic vinegar

4 tablespoons water

Combine all the ingredients in a small bowl and whisk them together well. Keep refrigerated in airtight container for up to 1 week.

Makes approximately 5 servings, 2 tablespoons each
